Raspberry Lemon Tart

Feeling accomplished after sprinting around the house; making yourself look presentable, putting delicious meals in the oven, cleaning your house and setting up the table with time to spare before guests arrive? … Only to realise you forgot about dessert? Don’t worry we have the solution for you!

Whether you’ve found yourself in the predicament above or you’re just feeling lazy and hungry we’ve decided to put together 3 easy desserts that are sure to impress your guests (or your own tummy!) in this blog post today.

We were lucky enough to have been sent samples of Lush Desserts products. Our samples included 2x chocolate mousses, 2x vanilla bean brulee mousses and 2x lemon curd mousses. In this blog post we’ll be using these samples to put together our dishes.

While these delicious desserts can be served to impress they can also just be eaten straight out the tub (the decision is up to you!).

1. Lemon Tarts

Raspberry Lemon Tart

The first dessert we made was lemon tarts using the Lush Desserts lemon curd mousse.

Here’s what you’ll need:

  1. 6x Tart bases/shells (we were lazy so we bought premade bases at Coles supermarkets! If you wish you can make your own base for significantly cheaper – just search ‘tart crust recipe’ or ‘tart base recipe’ into Google and you’ll find an abundance of recipes to help you do so).
  2. 1x 250g Lush Desserts lemon curd mousse.
  3. 6x Raspberries (you could also use blueberries or strawberries).

The steps:

  1. Preheat your oven at 180 degrees celsius.
  2. Put the tart bases in the oven until they are golden.
  3. Let the tart bases cool.
  4. Put the lemon curd mousse in the microwave for 30 seconds.
  5. Now that the mousse is a runnier consistency fill the cooled tarts with the mousse.
  6. Put the tarts in the fridge until the mousse sets (approximately 30 minutes).
  7. Once your tarts are cooled place a raspberry (or other berry of your choosing) on top of the tart.
  8. Viola! There you have it. You now have lemon tarts.

2. Chocolate Mousse Cups

The second dessert we made was chocolate mousse cups. This recipe is perhaps one of the easiest, quickest and cheapest of the three!

Here’s what you’ll need:

  1. 2x 250g Lush Desserts chocolate mousse.
  2. Whipping cream (you can just buy whipped cream in a can or you can buy whipping cream in a carton which you’d have to whip yourself until you get the right consistency).
  3. 1x 30g Flake chocolate bar.

The steps:

  1. Place both of the chocolate mousses in the microwave for 1 minute until they are a runny consistency.
  2. Pour the chocolate mousse into a glass or jar of your choosing.
  3. Place the glass/jar into the fridge and leave it to set (for approximately 30 minutes).
  4. Whip your whipping cream in a mixer until it’s the right consistency (or grab your can of whipped cream) and put the cream on top of the chocolate mousse. If you want a tidier look you can use a piping bag to do this, otherwise you can just plonk it on with a spoon.
  5. Break up your chocolate bar into smaller pieces. Crumble these pieces on top of the cream.
  6. Viola again! There you have it. A delicious, yet simple dessert within no time.

3. Lemon Meringue Nests

Lemon Meringue Nests

The third dessert we made was lemon meringue nests. Prior to making this dessert we had never even heard of ‘lemon meringue nests’ so we were a little worried about how difficult they would be to make. However they ended up being incredibly easy to make.

Here’s what you’ll need:

  1. 9x Meringue nests (again, as we were lazy we bought these premade from Coles Supermarkets however, if you wish, you can make your own quite easily.. search up ‘meringue nest recipe’ and again you’ll find an abundance of recipes that can help you out.
  2. 1x 250g Lush Desserts lemon curd mousse.
  3. 9x Raspberries – you could also use strawberries or blueberries instead.

The steps:

  • Put the mousse in the microwave for 30 seconds until it is a runnier consistency.
  • Put the mousse in a sandwich bag.
  • Cut the tip off the sandwich bag and pour the lemon mousse onto the meringue.
  • Put the meringue in the fridge to let the mousse set (approximately 30 minutes).
  • Once set place a raspberry on top of the lemon meringue nest.
  • Viola, viola, viola…. 3 easy desserts done and dusted. Now you can kick your feet back and relax!
